First recipe: shredded chicken tacos

As some of you who are reading this may know, this isn't my first dive into the blogging pool. For the past three (two-and-a-half, three, whatever) years I've been writing a blog called Booksbowsandbuttons. There I blogged about fashion, make up, movies... Practically everything!

But it isn't what I want anymore. It isn't where my passion lies. Where it does lie, though, is with food. Now that I do want. ALL THE TIME!
And for the past month or so I've been loving searching for new recipes and cooking them for my family.

Thus, the idea of this blog was born. 'Apple Pie and Heels' is where I'll be sharing my adventures as I try out new (and hopefully yummy) recipes. The first? Shredded chicken tacos.

As a dutchie, I never really get to eat proper mexican food and yet, in some weird wishful way, I crave it. So, I decided to start with the basics: tacos, chicken tacos to be more precise.

I used this recipe from Nerdymamma.com as my starting point and added my own little twist to it. Let's do this!



Ingredients:
- flour tortillas
- shredded lettuce
- diced avocado (I used two avocados for three people)
- 2 shallots (1 sliced, 1 diced)
- 1 jalapeno pepper
- 500 grams of boneless, skinless chicken thighs
- 4 cloves of garlic
- 2 tspn smoked paprika powder
- 1 1/2 tspn cumin
- 1 tspn cayenne pepper
- 1 tspn salt
- 1/2 tspn black pepper
- olive oil

Instructions:
1. Slice chicken into strips and place in a bowl.
2. Combine the spices, 1 diced shallot and the garlic (minced).
3. "Marinate" the chicken in the oil and spices       
4. Cook chicken in a very hot pan until they're cooked all the way through, no longer or the chicken gets really dry!
5. Meanwhile, warm your tortillas (one by one) in a pan and place them on a plate. Also, cut your veggies (avocado, onion, jalapeno pepper etc) as you won't get another chance to do so.
6. Now it's time to fill your tacos! Start with the chicken, then layer on the lettuce, shallot, avocado and sliced jalapenos. And you're done!
